FAIRY-TALE SALSA VERDE CHICKEN RECIPE WITH LE POULET

Once upon a time there lived a beloved king and his daughter, Pretty Goldilocks, was even more beloved. One day, her mother, the Queen, felt sick and died. Pretty Goldilocks and the whole kingdom mourned. The King married again, but he was not lucky as the new Queen was evil and wished to kill Pretty Goldilocks.

One day the Queen, with the help of the page, lured the princess into the Enchanted Forest. Pretty Goldilocks succumbed to the spell and fell asleep for seven years.

She was awaken by Handsome the Tomcat, who took care of her together with his mother, Goody the Doe. Pretty Goldilocks wanted to thank them and picked up a beautiful rose as a gift, unknowing that this will bring misfortune to her benefactors. The princess repented for seven years to fix the wrong she had done and to save her friends. Then the Good Fairy gave her a gold key for the casket where all secrets of happiness were hidden.

When Pretty Goldilocks opened the casket, a handsome prince appeared. She immediately fell in love with him. Everyone was invited to their gorgeous wedding, except for her evil step-mother. The celebration lasted for seven days, and in the end cooks served the kingdom's true speciality: a fairy-tale chicken with salsa verde.

Preparation time: 40 min
Cooking time: 60 min

Serves: 4

Ingredients:
1 Le Poulet chicken (1.5 kg)

40 g soft butter

230 ml olive oil

salt

black pepper

2 lemons
70 g capers
4 anchovy fillets
3 garlic cloves
1 bunch of rucola
1 bunch of parsley
½ bunch of basil

1 bunch green onions

Cooking method:

Preheat the oven to 230°C. Quarter the chicken, daub with the butter, salt and spice with the pepper. Put in a roast dish together with the lemons cut in half. Roast for 40 minutes. Take out and leave to rest for 10 minutes. Blend in a food processor the coarsely chopped onion, the fish and the capers. Add the garlic and process. Add the herbs, pour the olive oil and spice up with salt and pepper. Blend until coarse paste. Pour it into a cup. Serve the chicken with the lemon slices, the salsa verde and homemade bread.
