BRAU-MEISTER: BREWING IS OUR PASSION, OUR AIM IS TO SATE THE THIRST FOR GOOD BEER

The company is one of the fastest growing on the market and an innovator in Bulgaria's brewing industry. Its products stand out with their intriguing and high-quality fresh tastes. We talked about the idea behind the brewery and how it was created with Plamen Baykov, founder of Brau-Meister. 

Mr Baykov, you have a reputation for making wines and spirits. How was the idea for Brau-Meister born?

Our passion for making selected craft beers started a while ago with a simple belief - fans of good beer deserve better quality and a wider variety of products than what was available on the market at that moment. Brau-Meister is the natural manifestation of this passion. We are proud of the beers that we already created. However, there is always space for improvement, so we plan to continue experimenting and perfecting our products. For us, the aim towards the perfect beer is just a metaphor for the constant dedication to optimisation and progress in the brewing industry. In our portfolio, we focused on tradition, experience and innovation, skillfully mixed with a pinch of provocative mysticism. This was how we created the brands of outstanding craft beers Old Plovdiv, Moriak, Baba Yaga and Dr. Ink with intensive and dense tastes. 

The names Baba Yaga, or Granny Yaga, and Dr. Ink definitely sound provocative. Will you share some insider's information about them? 

Yes, our goal is to provoke people to try something different, new and memorable. Baba Yaga craft beer comes as pale ale, weiss, red ale and stout. Each of these has palpably different characteristics that skillfully combine the nuances of the malts used for them, complemented in a perfect harmony with the tastes and aromas of the variety of hops used. Pale ale is made of 5 types of malts – Caramel Pils, Wheat, Vienna, Pale Ale, Wheat Dark, 3 types of hops – Cascade, Amarillo, Northern Brewer, special yeast and water. Weiss is made of 4 types of malts (Wheat, Vienna, Pale Ale, Wheat Dark), aromatic hops type Amarillo, special yeast and water. Red ale is of 4 types of malt – Meladonin, Pale Ale, Red X, Wheat, 4 types of hops – Mosaic, Saaz, Citra and Amarillo, special yeast and water. Stout is of 5 types of malts – Pale Ale, Munich Dark, Caramel Munich, Chocolate, Black Malt, aromatic hops type Amarillo, special yeast and water. Dr. Ink is an IPA of 3 types of malts – Pale Ale, Munich Dark and Caramel Munich, 3 types of hops – Simcoe, Amarillo and Citra, special yeast and water. 

What is your mission as a part of the brewing industry? 

Our mission is tried, tested and based in real life – each day to be better than the one before! To offer Bulgarian craft beer of true high quality and perfection. To develop the Bulgarian brewing industry so that it becomes on a par with the best international examples with competitive beers of excellent quality and fresh tastes. Г-н Байков, вие сте известен с опита си във винарството и спиртните напитки. Как се роди идеята да създадете Крафт Пивоварна Пловдив?

Нашата страст за приготвяне на подбрани занаятчийски бири започна преди време с едно просто убеждение – феновете на добрата бира заслужават по-високо качество и разнообразие от продукти, отколкото се предлагаха на пазара тогава. Крафт Пивоварна Пловдив е естественото проявление на тази страст. Гордеем се с бирите, които сме разработили досега. Винаги обаче има място за подобрение, така че възнамеряваме да продължим да експериментираме и да се усъвършенстваме. За нас стремежът към перфектната бира е просто метафора за постоянната отдаденост към оптимизиране и прогрес в сферата на пивоварството. В портфолиото ни заложихме на традицията, опита и новаторството, умело смесени с щипка провокативна мистичност. Така създадохме марките отличителни крафт бири "Старият Пловдивъ", "Моряк", "Баба Яга" и Dr.Ink с интензивни и наситени вкусове.

"Баба Яга" и Dr. Ink звучат доста провокативно като марки. Ще споделите ли нещо от кухнята за тях?

Да, целта ни е да провокираме хората към различно изживяване, ново и запомнящо се. Крафт бира "Баба Яга" се предлага като pale ale, weiss, red ale и stout. Всяка от бирите с изброените стилове е с осезаемо различни вкусови характеристики, но съчетаващи умело нюансите от използваните малцове, допълнени в перфектна хармония с вкусовете и ароматите от използваните разнообразни хмелове.
