Veneta Pissarska is the Managing Director of Lesaffre Bulgaria. She has been a part of the company since 2002. Under her guidance, the Bulgarian branch of the company has won many loyal clients and partners, and bravely introduces on the local market the latest innovations in production and tastes. Earlier this year, the efforts of Lesaffre Bulgaria were recognised with the award Successful Entrepreneurship During a Pandemic. Another recent initiative of the company is the opening of the first Lesaffre's Baking CentreTM in Sofia this September. We talked to Veneta Pissarska to learn more.
What is the concept of the Baking CenterTM of Lesaffre Group?
The Baking CentersTM of Lesaffre Group are places for training, innovation and exchange of skills and knowledge from master bakers to their colleagues, technologists and amateurs. They are places for creativity, where experts and amateurs from different countries, regions and cultures meet, where people united by their love for bread exchange experience and create new bread products and learn from one another.
Our centre in Sofia is a part of Lessafre's international chain of Baking CentresTM. In partnership with MIWE Bulgaria, it has been equipped with the latest digital ovens and technologies that are just being introduced on the European market.
What is the goal of the Bulgarian Baking CenterTM? For who is it?
The centre in Sofia is a place for Bulgarian bakers and technologists. It is a modern bakery-cum-laboratory for exchange of experience and skills, for testing yeast, sourdough, starters and ingredients for bread, and development of new products before they are introduced to the market. This is a place for creativity and for hanging down the line this craft's traditions. It is also where Bulgarian professionals and amateurs will have access to the latest international developments and innovations, will be able to try them, test them on local soil and offer to the market products that reflect the customers' tastes and demands.
This summer Lesaffre Bulgaria won B2B Media's big award for most successful entrepreneurship during a pandemic. Why did you deserve this recognition?
Our company won the award for its successful development in the challenging 2020. Despite the pandemic's difficulties, Lesaffre Bulgaria adequately responded to the significantly increased bread consumption during the emergency situation and provided sufficient quantities of yeast to bread producers. Lesaffre Bulgaria won the Successful Entrepreneurship During a Pandemic award in competition with six other companies in different business fields in Bulgaria. It was recognised for its contribution for providing food to the Bulgarian nation during a pandemic.
What was the biggest challenge you faced as a manager during the pandemic? How did you overcome it?
2020 was a challenging and interesting year that put to the test all of our technologies and management systems. I think that when we had to meet the significantly increased demand for bread yeast, the required fast decision-making and creativity in execution were the biggest challenges for us. The unity of our team, and our flexibility and entrepreneurship were our biggest advantage.
What are the trends in bread production in 2021? How does Lesaffre Bulgaria meet them?
The demand for healthy foods is a global trend. We are witnessing a veritable return to bread's authentic taste. Producers increasingly want to answer more adequately to these trends and ask more frequently for natural and organic products.
We are also witnessing the return of the breadmaking craft. Many people rediscovered bread kneading and baking. We see the opening of small bakeries for handmade, quality products. In Bulgaria there is also an increased interest in good bread with authentic taste and quality ingredients.
What solutions do you provide to producers who want to offer their clients organic products? What are their qualities?
Lesaffre is an international manufacturer with a sense for quality and care for nature. All of our production lines are certified and for years we have applied full follow-up and control on ingredients. We provide to partners who want to be sure of our reliability as a supplier with all of our international quality certificates. We also give them an option for auditing.
Lesaffre Bulgaria is also organically certified and offers organic products, yeast, sourdough and ingredients to producers who want to answer adequately to the demand for organic products on the local market.
The newest center for breadmakers and bakers of Lesaffre opened doors in Sofia

Lesaffre Bulgaria opened its newest center for technologists, bread-makers and bakers in Sofia. It is a part of the global chain Baking CenterTM of the Company and is equipped in partnership with Miwe Bulgaria. Lesaffre Bulgaria EOOD (LTD) was incorporated 22 years ago and is a part of Lesaffre Group Inc., an international expert and leader in the sphere of fermentation processes and technologies.
Products in real production conditions may be tested in the baking centers of Lesaffre, specialists may be trained and demonstrations and trainings may be conducted in them. These are places for exchange of experience and skills between experts and masters bakers. Professionals with experience of many years in bread-making work in them, ready to transfer their love and skills to each present and future baker.
